Coffee from the Chiapas region

This organic coffee from the Mexican region of Chiapas comes from smallholder growers who are members of the FEDESI federation. The coffee is fully washed, giving it a sweet, clean taste with notes of pear, milk chocolate and hazelnut. It is grown at an altitude of 1,200 to 1,700 m a.s.l.

The FEDESI federation brings together more than 2,990 growers from six cooperatives. Its aim is to help farmers achieve better prices for their coffee and expand access to new markets. The growers work on small farms of around 2.5 hectares and, thanks to technical support and training, can improve the quality of their production.

The farmers carefully hand-pick ripe cherries, ferment them in cement tanks and then dry them on patios. This process ensures high-quality coffee that retains its unique flavour characteristics.

Mexico Fedesi coffee is certified as an organic product, which means it is grown in line with strict organic farming standards. The farmers use natural methods that protect the soil and the surrounding ecosystem, and avoid synthetic pesticides and fertilisers.
